Welcome to My Kitchen !

Halloo people! Hope you all are having fun and enjoying vacation like me. For more than a month I'm away from my love - my blog only because I'm enjoying my vacation here at my hometown.😊 Otherwise you all know that i can't stay away from blog not more than a week Lazy mode is on and will continue until september! hehe! I'm enjoying the monsoon with all the deliciousness served by umma and her sis with loots of love.

I want this recipe to be on the blog badly so tried to click it from here in between some greens!! Since my hubby is not a fish lover i can't think of making it there (KSA)! This is such a flavorful rice with fried and boiled fish served on top. For this rice we all prefer the boiled fish more than fried one.

This is different from biriyanis, with no compromise in it's flavors. While making masala fish is boiled in that gravy and some fish are marinated and fried separately. After the fish is cooked completely it will be taken out and then the rice is cooked in this masala with enough water. Then it’s served on top of the rice while dishing up. Now i want to irritate mom for the recipe!Let me do it!

  • 1 kg king fish
  • 5 onions
  • 4 tomatoes
  • 8 to 10 green chilies
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 1/2 tbsp chilly powder
  • 1/2 tsp turmeric powder
  • 1/2 tbsp coriander powder
  • Salt to taste
  • juice of two lemon
  • 1 tsp garam masala
  • Curry leaves
  • 3 tbsp oil
  • 2 cups water

  • 4 cups jeerakashala or basmathi rice
  • 6 cups water
  • Oil+ ghee
  • salt to taste
  • 1/2 of an onion sliced
  • A pinch of turmeric powder
  1. In a pressure cooker put all the ingredients from onions to salt with some water mix well and let it cook for 5 to 8 whistles.(this step is to make the cooking process faster you can skip the pressure cooker step and saute it all until the veggies are mushy and masalas are well cooked)
  2. In a pan pour oil splutter curry leaves and pour the onion masala, squeeze in lemon juice, add garam masala and lots of coriander leaves.
  3. Pour 2 cups of water and let it comes to a boil.
  4. Then put the fish pieces in it and cook(Don't over cook the fish as it tends to break)
  5. When it's done take it out and keep it aside.
  6. Now in a large pot pour ghee+oil when its hot enough roast the onion along with a pinch of turmeric powder.
  7. Add the washed and drained rice to the oil and roast it for 5 minutes.
  8. Add enough salt.Pour the boiling water and masala, mix well and let the rice cook until done.
  9. While serving garnish it with both fried and boiled fish with some coriander leaves on top.
Note :Preserve and marinate some fish for frying before boiling

That's my uncle holding the rice bowl!!When he saw me clicking the pic came running to hold the plate!haha! It's our family fav make it urs too!

That's my dream to post some speciality from home comes true!(laziness at it's peak)

  3. Press it to the base of the cheese cake mould and let it chill for 1/2 an hour in freezer
  4. Blend whip cream powder, milk and vanilla essence to a thick whipping cream and keep it aside.

  7. Top it with some more biscuit crunch and a drizzle of nutella.
Note:To make dul ce de leche or toffee remove label from tin then without opening the can put it in pressure cooker with about one and half liters of water. Close the pressure cooker and after one whistle simmer it to low flame and cook it for 50 mins. Then let the pressure cooker cool down Fully before opening, also let the tin cool completely before opening it. IF YOU OPEN IT WHEN IT’S HOT IT CAN SPLASH OUT!You will get the thick toffee by doing this method.

Tip:If you want a firmer slice add a tsp of gelatin(by blooming and dissolving it in water) to the cream cheese mixture.

Relish it with your family!

My second Eid treat is Kunafah/Kanafeh! Middle Eastern cheese pastry soaked in sweet, simple syrup.Kunafah is now a days trending recipe,so thought to share my recipe for this lovely dessert.I'm a big fan of this deliciousness which is mildly sweet and best served when it's lightly warm.

This dessert is made with a thin strips of vermicelli called Kataifi. It is also made with a semolina dough which is made from scratch. This is very simple and easy to put together and taste really good.If you want to try an Arabic Sweet for this Eid do try this.

The baked kunafah is soaked in warm sugar syrup to sweeten it.Almost all Arabic sweets are sweetened using this simple syrup.I made a reduce milk dessert and layered top of it with mozzarella.

  • 300 gm Kataifi
  • 100 gm butter
To make filling
  • 1 cup milk
  • 1/2 cup water
  • 2 tbsp milk powder
  • 2 tbsp sugar
  • 2 tbsp cornflour
  • 2 tbs all purpose flour
  • 1 tsp vanilla essence
  • 1 tub fresh cream
  • 4 cube cream cheese
For simple syrup
  • 1 cup sugar
  • 1 & 1/2 cup water
  • 1/2 tsp orange blossom water
Boil it and make a simple syrup

  1. In a saucepan pour milk, water and all dry ingredients and mix well.Stir and cook it until you get a thick creamy consistency.
  2. when it's cool pour it in a blender add fresh cream and cheese cubes and blend it to a smooth creamy pudding.keep it aside
  3. In a food processor put your kunafah dough and blitz it to small pieces. Now add melted butter in it and pulse it again until butter and kataifi incorporated well.
  4. Preheat your oven to 200 degree.
  5. Now butter a 9'inch baking tray and spread the prepared kunafah dough evenly and press it tightly over to the base using your hands or with the back of a glass
  6. Then pour the prepared cream and place a thin layer of sliced mozzarella Now top it with the remaining kataifi and press it gently with your hands to make it even.
  7. Bake the Kanafeh in the preheated oven for 40 minutes or until the top is golden brown and crisp.Loosen it with the hepl of a spatula.
  8. Flip it over to the serving dish and pour the sugar syrup immediately.
  9. Garnish with powdered pistachio and relish it.

Relish it when it's warm!

The simplest chocolate cake ever with all those moistness and richness of chocolate.Within 15 minutes your batter is ready to bake.Eid is around the corner and why not a Moist and chocolaty cake with all those mouthwatering chocolate butter cream icing!Yay That means double dose of chocolate!

Isn't that slices looking gorgeous? For almost all cakes that require icing, i used to bake this chocolate cake.Made it on Kshif's request and saved it to share during the time of Eid.Kashif was eagerly waiting for Azaan so that he can have a slice, and until I've clicked was hiding it from my toddler hehe!

This cakes need only a hand whisk and spatula for mixing. No electric blender ,no kitchen aid nothing fancy.Perfect Eid treat isn't it????Even kids can do it.I added cream cheese along with the butter cream to cut the over sweetness and the icing was perfecto!

Come on take a piece,my Eid treat for you all!

This is a mouthwatering and flavorful crunchy chicken kebabs.Usually the kebabs are either baked or shallow fried. This one is nicely crumb coated with the combination of breadcrumbs and cornflakes and then deep fried. The scrumptious flavor from the chicken and seasoning along with shredded cheddar cheese was yum!

Can you believe the Ramadan is almost over..Time is flying and wholeheartedly we are bidding adieu to the holy month.I'm sure many of us have same feeling when the Ramadan is getting over.May Allah accept all our good deeds and bless us to see many more years of Ramadan.

I want a simple, delicious and moderate spiced recipe as i need to share some of the Iftar treats with my Arab neighbours. While browsing through out the internet I gotta see many such recipes,so here it is a simple yet flavorful recipe that makes in a jiffy. If you doubt whether the chicken gets cooked while in deep fry, well you can avoid this by frying it on a low flame. It will take almost 8 to 10 minutes on low heat for chicken to be cooked fully .

Here after frying i skewered it,to make it looks more presentable. My kids loved it as it's not that spicy and also crunchy to munch on!

  • 2 chicken breast fillet
  • 1/2 of an onion
  • 1 carrot
  • 4 cloves garlic
  • small piece ginger
  • 1 tsp pepper powder
  • Salt to taste
  • 1/2 tsp soy sauce
  • 1/2 tsp tomato sauce
  • Lots of coriander leaves
  • 1/2 to 1 cup shredded cheddar cheese
  • 1/4 off egg rest of the egg to dip
  • Bread crumbs + crushed cornflakes
  • Oil to deep fry

  1. In a food processor add all the ingredients up to coriander leaves and mince it.
  2. Add 2 tbsp egg by beating the whole egg, cheddar cheese and mix well.If the mixture is not thick enough to roll add some all purpose flour and mix.
  3. Take small balls out of it and shape them to a cylindrical log by rolling it evenly
  4. Dip it in egg white and bread crumbs.Keep it in refrigerator for 1/2 an hour and then deep fry it on low heat until golden brown and crisp.
  5. Serve it hot with your fav dip.

It was so crispy and flavorful!Do try it!

Happy Cooking!
